5 Facts About Limes

There is nothing quite like the sour zingy taste from the acidic zesty lime to pucker your face right up!  Limes are another very popular flavoring in my house.  It can really gives food a refreshing taste. 

Facts
1.   Lime exceeds lemons in vitamin C department. The vitamin C content in limes increases the body’s resistance to disease, aids the healing of wounds and aids in preventing damage to the eyes.
2.   Limes have potent anti-viral properties that allow it to kill cholera bacilli in a short period of time. I try drinking one part juice and one part water a couple times a day, it’s a good thing.
3.   The lime is the smallest citrus fruit; its nutritional health benefits include vitamin B, niacin, vitamin C, calcium, iron, phosphorus and traces of riboflavin.
4.   There is pectin found in the fruit pulp of limes that is said to be beneficial in lowering blood cholesterol.
5.   Limes contain flavonoids and phytochemicals that help protect our bodies from disease.
These small green sour citrus fruits are used often in my kitchen; I like to keep a couple on hand at all times.  You can use thin slices of lime to counterbalance flavors.  Limes are used in teas and other beverages, in salad dressings, in grilling whether it's fish or chicken, in soups and main dishes.  It is one of those versatile ingredients I have to have on hand.
