Easy Pleasing Healthy Meatloaf Recipe


Surprise them all with a meatloaf they will love with a surprising healthy twist.  By substituting bread/bread crumbs with old fashioned oats I am able to give my family all of the many health advantages that come with it without sacrificing flavor. I use extra lean ground beef to cut out the much of the fat. Olive oil is used in place of vegetable oil for a better way to sauté, and by using low fat milk instead of whole milk I get the nutritional value and less of the fat!




 

Ingredients

1 pkg. Meatloaf with cooking bag seasoning mix (I prefer McCormick)
2 lbs Extra lean ground beef (93%)
1 tbsp olive oil
½ onion, finely chopped
1 egg lightly beaten
½ cup low fat milk
¼ cup ketchup
1 tbsp Worcestershire sauce
1/2 rolled or old fashioned oats (not instant)
1 tbsp garlic
1 tsp season salt
1 tsp black pepper
½ tsp cayenne pepper
2 tbsp light brown sugar
4 cups cut up vegetables or 4 cans vegetables drained, such as carrots, green beans and onions



Directions
  1. Preheat oven to 350 degrees, place cooking bag in 9x13 inch baking pan or dish set aside.  In a non-stick skillet over medium heat, heat olive oil.  Add onions; sauté for 3-4 minutes until tender stir frequently.  Remove from heat.
  2. In a large bowl add ground beef, sautéed onions, slightly beaten egg, ketchup, Worcestershire sauce, and milk.  Mix together to blend.
  3. Add remaining dry ingredients; meatloaf seasoning, oats, garlic, season salt, black pepper, cayenne pepper, and brown sugar mix until well blended.
  4. Allow mixture to sit in the refrigerator for 15-20 minutes.
  5. Remove mixture from refrigerator.  Shape meat mixture into 9x5-inch loaf.  Place in bag. Arrange vegetables around the meatloaf mixture.  Close bag loosely with the nylon tie.  Cut 4 small holes I top of bad to allow steam to escape.
  6. Bake in the middle rack of over for 60 to 75 minutes or until meat is cooked through
  7. Remove from oven allow meatloaf to sit for 5 minutes.  Cut open bag, slice meat loaf into 1 inch slices and serve with vegetables.
My family loves to top this moist delicious meatloaf with ketchup.  Serve with baked potato to round off this meal just right.
Tip
You can also top this flavorful meatloaf with gravy…
Remove meatloaf and vegetables from the juice in the bag and set aside.  You will want to use the juices from the vegetables and meat in the bag.  Heat pan to medium high, add 3 tablespoon butter and melt, add 3 tablespoons flour then whisk to blend the flour and butter.  Add juices to mixture blending and allow it to thicken as desired.
