Pumkin Delicious Cookies

It is fall and Thanksgiving is approaching!  If you are a busy mom like so many of us are and want some thing quick yet sweet and delicious for you and your family to just melt over, give these a try!  I love these cookies because they are quick and easy to prepare and the family just loves them!  You will have them melting in your hands! 


Ingredients

  • 1 (18.25 ounce ) package spice cake mix preferably Betty Crocker
  • 1 (15 ounce) can solid packed pumpkin
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla
  • 1/4 ginger
  • 1/8 cinnamon
  • 1/4 cup chocolate chips
  • 1 cream cheese frosting icing
  • 1/2 teaspoon ground cloves

Directions

  1. Preheat oven to 350 degrees F (175 degrees C.)  Grease cookie sheets.
  2. In a large bowl, stir together the cake mix and canned pumpkin, folding the wet into the dry until well blended.  Add the pumpkin pie spice, vanilla and chocolate chips, stir an additional 10 seconds until well blended  Drop by 1 tbsp spoonfuls onto the prepared cookie sheet. 
  3. Bake for 12 to 14 minutes in the preheated oven.  Allow cookies to cool on baking sheet for 5 minutes in the preheated over.  Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  4. Top with cream cheese frosting and sprinkle clove spice on top of each cookie.
